
Oven-baked Chicken with Grapes, Thyme & Potatoes

Slow-cooked chicken, roasted baby potatoes, and juicy grapes, all from the oven: a surprisingly colourful main course for two. With the scent of fresh thyme and a hint of balsamic, you can quickly put something warm and savoury on the table.

Ingredients
- 300 gchicken thigh fillet
- 400 gbaby potatoes
- 200 gblue seedless grapes
- 1 pcred onion
- 2 clovesgarlic
- 2 tbspolive oil
- 1 tbspbalsamic vinegar
- 1 tsphoney
- 5 gfresh thyme
- ½ tspfine sea salt
- ¼ tspfreshly ground black pepper

Preheat the oven to 210 °C.

Halve the larger baby potatoes and cut the red onion into wedges.

Spread the baby potatoes and red onion over a large baking dish. Mix with 1 tbsp olive oil, half of the salt and some black pepper.

Bake the baby potatoes in the oven for 15 minutes.

Meanwhile, mix the remaining olive oil with balsamic vinegar, honey, finely chopped garlic, and the leaves from half of the thyme.

Cut the chicken thigh fillets into coarse pieces and mix with the balsamic mixture and the remaining salt and pepper.

Remove the baking dish from the oven and distribute the chicken among the baby potatoes.

Bake everything for another 12 minutes.

Add the grapes and carefully turn everything over once.

Bake for another 8–10 minutes, until the chicken is cooked through, the baby potatoes are golden brown, and some of the grapes start to soften.

Sprinkle the remaining fresh thyme over and serve immediately.
