
Crispy Flammkuchen with Spiced Chicken, Avocado & Roasted Pepper

An airy base, juicy chicken, and a rich combination of avocado and roasted pepper: this flammkuchen is surprisingly spicy and deliciously fresh. Ideal as a flavourful main course for a weekday or the weekend.

Ingredients
- 1 rollflammkuchen dough — approx. 260 g
- 300 gchicken thigh fillet
- 150 groasted red pepper — from a jar
- 100 gcherry tomatoes
- 1 pcavocado
- 2 pcsspring onions
- 100 gcream cheese — natural
- 75 gcheddar — grated
- 1 tbspolive oil
- 1 tspsmoked paprika powder
- ½ tspground cumin
- ½ tspgarlic powder
- ½ tsporegano — dried
- 0.5 pclime
- 10 gcoriander — fresh
- ½ tspsalt
- black pepper — to taste

Preheat the oven to 220 °C top and bottom heat.

Cut the chicken thigh into small strips and mix with olive oil, smoked paprika powder, cumin, garlic powder, oregano, salt, and black pepper.

Cook the chicken for 4–5 minutes in a hot frying pan. The chicken does not need to be fully cooked yet.

Drain the roasted pepper well, pat dry, and cut into thin strips.

Roll out the flammkuchen dough with the baking paper onto a baking tray.

Spread the dough thinly with the cream cheese, leaving approximately 1 cm free around the edge.

Distribute the chicken and roasted pepper over the dough and sprinkle with cheddar.

Bake for 12–15 minutes until the edges are golden brown and crispy and the chicken is fully cooked.

Halve the cherry tomatoes, slice the avocado thinly, and cut the spring onion into fine rings.

Let the baked flammkuchen stand for 2 minutes.

Distribute the avocado and cherry tomatoes over it.

Add spring onion and coriander. Optionally, grate some zest from half a lime over the topping and distribute approximately 1 tbsp of lime juice over the avocado.
