
Crispy Mussels with Lemon, Parmesan & Chilli

These crispy mussels are a delicious combination of tender seafood, fresh lemon, and a lightly spicy crust of Parmesan and chilli. Perfect as a lunch to share and enjoy together.

Ingredients
- 1000 gmussels — ready-to-cook
- 50 gpanko
- 40 gParmesan cheese
- 50 gbutter — unsalted, soft
- 2 clovesgarlic
- 2 tbspparsley — finely chopped, fresh
- lemon zest — from 0.5 lemon
- ¼ tspchilli flakes
- black pepper — freshly ground

Preheat the oven to 225 °C. Rinse the mussels thoroughly. Discard any broken mussels and those that do not close after a tap.

Place the mussels with their adhering water in a large pan. Cover with a lid and cook for approximately 5–7 minutes, until the shells have opened. Shake the pan a few times in between. Discard any mussels that remained closed.

Allow the mussels to cool briefly. Then, break off the empty top shell half from each mussel.

Meanwhile, mix the panko with the soft butter, Parmesan cheese, garlic, parsley, lemon zest, chilli flakes, and black pepper. Add 1 tbsp of mussel cooking liquid and mix until a loose, moist crumb is formed.

Place the mussels, with the filled shell facing upwards, on a baking tray or in a shallow oven dish.

Distribute a small amount of the crispy mixture over each mussel. Do not press it too firmly; this way the top can become beautifully crispy.

Gratinate the mussels for about 8–10 minutes in the middle of the oven, until the crumb is golden brown and crispy.
