The luscious combination of dark chocolate, fresh orange, and creamy layers makes this dessert extra special. Serve this tiramisu and you'll finish dinner relaxed and in style.

Ingredients
- 350 gmascarpone
- 2eggs — pasteurised
- 60 gcaster sugar
- 150 mlespresso — strong
- 30 mlamaretto
- 200 gladyfingers
- orange — zest of 0.5 organic
- 40 gdark chocolate — at least 70% cocoa
- 2 tbspcocoa powder — unsweetened
Method

Prepare the espresso and let it cool completely. Then mix with the amaretto.

Separate the eggs. Place the egg yolks with the caster sugar in a bowl and whisk until a light, creamy mixture forms.

Add the mascarpone and mix briefly until a smooth cream.

Whisk the egg whites stiff in a clean bowl. Carefully fold the egg whites into the mascarpone mixture, ensuring the cream remains airy.

Fold the orange zest into the cream.

Dip the ladyfingers one by one very briefly into the espresso-amaretto mixture. Do not let them soak completely.

Arrange half of the ladyfingers in a suitable dish and spread half of the mascarpone cream over them.

Create a second layer with the remaining ladyfingers and finish with the rest of the mascarpone cream.

Cover the dish and let the tiramisu firm up in the refrigerator for at least 4 hours.

Just before serving, finely grate the dark chocolate. First sprinkle the top evenly with cocoa powder, then with the grated chocolate.
