
Watermelon Sorbet with Lime & Mint

This refreshing sorbet combines the best of watermelon, lime and mint into a delicious summer dessert. Easy to make and perfect to enjoy cool after a sunny day.

Ingredients
- 800 gwatermelon — without rind and seeds
- 1 pclime
- 2 tbspmaple syrup
- 10 gfresh mint
- salt — small pinch
Method

Cut the watermelon into 2–3 cm cubes.

Arrange the cubes in a single layer on a baking tray or sheet lined with baking paper.

Freeze for at least 4 hours until the watermelon is completely frozen.

Finely grate the green zest from the lime and squeeze the lime.

Place the frozen watermelon in a powerful blender or food processor.

Add 2 tbsp lime juice, 2 tbsp maple syrup, half of the lime zest, 8 g mint leaves, and a small pinch of salt.

Blend briefly and powerfully until a smooth, thick sorbet. Stop occasionally to push the watermelon down. Do not add water.

Taste and add a little more lime juice if necessary.

Serve immediately as a soft sorbet or freeze for another 45–60 minutes for firmer, scoopable scoops.

Garnish with the remaining mint and a little lime zest.
