
Chicory Salad with Grapes, Apple, Walnuts & Mature Cheese

Fresh, crunchy, and rich in flavour: this salad brings chicory, grapes, apple, walnuts, and mature cheese together in a surprising combination. Ideal for lunch, it's an easy way to put something special on the table.

Ingredients
- 500 gchicory
- 200 ggreen grapes — seedless
- 1apple — tart, approx. 180 g
- 75 gmature cheese
- 60 gwalnuts
- 10 gchives — fresh
- 100 gGreek yoghurt
- 1½ tbspwholegrain mustard
- 1 tbsphoney
- 1½ tbspapple cider vinegar
- 1 tbspolive oil — extra virgin
- black pepper
- salt — pinch
Method

Toast the walnuts for 3–4 minutes in a dry frying pan, let cool, and roughly chop.

Mix Greek yoghurt, wholegrain mustard, honey, apple cider vinegar, and olive oil to make a dressing. Season with black pepper and a pinch of salt.

Clean the chicory, remove only the hard bottom part of the core, and cut the chicory into strips 1–1½ cm wide.

Halve the grapes.

Cut the apple with its skin into thin strips or small wedges and immediately mix with 1 tbsp of the dressing.

Mix chicory, grapes, and apple.

Add approximately ¾ of the dressing and gently toss. Add more dressing if needed.

Shave or cut the mature cheese into small thin pieces.

Distribute walnuts and mature cheese over the salad.

Finish with finely chopped chives and black pepper.
