
Strawberry and Raspberry Trifle with Lime & White Chocolate

Fresh, creamy, and full of summer fruit: this trifle combines strawberries, raspberries, and white chocolate into a festive dessert. Perfect to enjoy together after a relaxed meal.

Ingredients
- 350 gbutter cake
- 450 gstrawberries
- 150 graspberries
- 1lime
- 250 gmascarpone
- 250 mldouble cream
- 3 tbspstrawberry jam
- 2 tspsugar
- 40 gwhite chocolate

Preheat the oven to 200 °C top and bottom heat or 180 °C fan-assisted.

Remove the hulls from the strawberries. Set aside 4 nice strawberries for garnish. Cut the remaining strawberries into coarse pieces.

Place about half of the cut strawberries in a small oven dish. Mix with 1 tsp sugar and bake them in the oven for about 15 minutes, until soft and juicy. Then let them cool down slightly.

Mix the remaining strawberries with the raspberries, 1 tsp sugar, the finely grated lime zest, and 1 tbsp lime juice. Let this stand for about 10 minutes.

Briefly whisk the mascarpone with the strawberry jam. Add the double cream and whisk until a light, firm cream forms.

Cut the butter cake into coarse cubes.

Divide half of the fresh strawberry and raspberry mixture with some of the released juice among four glasses. Layer half of the cake over this.

Spoon the mascarpone cream on top. Then divide the remaining cake and the remaining fresh fruit among the glasses.

Finish with the warm/cooled roasted strawberries and a little of the strawberry juice from the oven dish.

Coarsely shave the white chocolate over the trifles and place one of the reserved strawberries on each glass.
