
Moroccan Meatballs with Couscous & Spiced Tomato Sauce

Inspired by the flavours of Morocco: tender meatballs in a spiced tomato sauce. Served with fluffy couscous and fresh parsley for a warm, flavourful meal.

Ingredients
- 300 gbeef mince
- 150 gcouscous
- 400 gchopped tomatoes — canned
- 1onion — small
- 1 clovegarlic
- 1 tspground cumin
- 1 tsppaprika powder
- ½ tspground cinnamon
- 1 tbspolive oil
- 10 gflat-leaf parsley — fresh
- ½ tspsea salt — fine
- ¼ tspblack pepper — freshly ground
Method

Finely chop the onion and garlic.

Mix the mince with half of the cumin, half of the paprika powder, half of the salt and some black pepper.

Form about 10 small meatballs from this mixture.

Heat the olive oil in a large frying pan and brown the meatballs on all sides for about 6 minutes. They don't need to be fully cooked through yet. Briefly remove them from the pan.

Cook the onion in the same pan for about 2 minutes.

Add the garlic, the remaining cumin, the remaining paprika powder and the cinnamon and cook for about 30 seconds.

Add the chopped tomatoes and let the sauce simmer gently for 5 minutes.

Return the meatballs to the sauce and let them gently cook for another 6–8 minutes.

Meanwhile, prepare the couscous according to the package instructions.

Fluff the couscous with a fork.

Sprinkle the coarsely chopped parsley over the meatballs and serve with the couscous.
