
Toasted Sandwich with Camembert, Pear & Caramelised Red Onion

Warm, crispy sourdough bread filled with creamy camembert, juicy pear and caramelised red onion. A surprising toasted sandwich perfect for a relaxed lunch.

Ingredients
- 4sourdough bread — thick slices
- 150 gcamembert
- 1Conference pear — firm
- 1red onion — small
- 40 gwalnuts
- 30 grocket
- 1 tbspcoarse grain mustard
- 2 tsphoney
- 1 tspbalsamic vinegar
- 15 gbutter
- black pepper
- salt — pinch
Method

Slice the red onion into thin half-rings.

Melt 5 g butter and fry the onion for 6–8 minutes over low to medium heat.

Add balsamic vinegar and 1 tsp honey and fry for another 1–2 minutes. Add a small pinch of salt.

Roughly chop the walnuts and toast them for 2–3 minutes in a dry frying pan.

Slice the pear (with skin) and camembert into thin slices.

Spread two slices of sourdough bread with coarse grain mustard.

Divide camembert, pear, caramelised onion and 30 g walnuts over the bread.

Drizzle the remaining 1 tsp honey over and add black pepper.

Place the remaining slices of bread on top and butter the outsides with the remaining 10 g butter.

Toast the sandwiches for 3–4 minutes per side over low to medium heat, until the bread is crispy and the camembert is fully melted.

Carefully open the toasted sandwiches and distribute the rocket between them.

Cut diagonally in half and finish with the remaining 10 g walnuts.
