
Grilled Cheese Sandwich with Mozzarella, Roasted Bell Pepper & Green Pesto

Lunch becomes truly special with a grilled cheese sandwich like this. Creamy mozzarella, roasted bell pepper, and fresh basil make every bite a treat.

Ingredients
- 4sourdough bread — sturdy slices
- 150 gmozzarella
- 150 groasted red bell pepper — from a jar, drained
- 50 gsun-dried tomatoes — drained
- 2 tbspgreen pesto
- 30 gParmesan cheese
- 10 gbasil — fresh
- 1 tbspolive oil
- black pepper

Drain the mozzarella, pat dry thoroughly, and slice thinly.

Drain the roasted bell pepper, pat dry, and cut into wide strips.

Drain the sun-dried tomatoes and cut into smaller strips.

Spread 1 tbsp of green pesto on each of two slices of sourdough bread.

Arrange mozzarella, roasted bell pepper, and sun-dried tomato over them.

Sprinkle the Parmesan cheese over the filling and add black pepper.

Cover with the remaining slices of bread.

Lightly brush the outsides with olive oil.

Cook the grilled cheese sandwiches for 3–4 minutes per side over low to medium heat until the bread is crispy and the mozzarella is completely melted.

Carefully open the grilled cheese sandwiches and distribute the fresh basil over the filling.
