
Savoury Cheese Waffles with Scrambled Eggs, Bacon and Chives

Start your day with these delicious savoury cheese waffles, richly topped with creamy scrambled eggs and crispy bacon. A warm and nutritious start with a fresh touch of chives.

Ingredients
- 150 gself-raising flour
- 1egg
- 175 mlmilk
- 2 tbspsunflower oil
- 50 gmature cheese — grated
- ¼ tspblack pepper
- 4eggs
- 4 slicesbacon
- 1 tbspchives — finely chopped, fresh
- ¼ tspblack pepper
- salt — to taste
Method

Preheat the waffle iron.

Put the self-raising flour, egg, milk, sunflower oil and black pepper in a bowl and mix until a smooth batter.

Stir the grated mature cheese into the batter.

Grease the waffle iron lightly if necessary. Divide some of the batter over the iron and bake the waffles in about 4–5 minutes until golden brown and cooked through. Repeat with the rest of the batter.

Meanwhile, fry the bacon in a dry frying pan until crispy. Drain on kitchen paper.

Whisk the 4 eggs with the black pepper.

Place a frying pan over low heat and add the egg mixture. Stir gently until the egg is just set but still soft and creamy. Season very lightly with salt if desired.

Place the warm waffles on plates.

Divide the creamy scrambled eggs over the waffles.

Top with the crispy bacon and finish with the fresh chives.
