
Banana Bread with Dark Chocolate & Walnuts

This banana bread is richly filled with chunks of dark chocolate and crunchy walnuts. Perfect as a breakfast when you want to take your time.

Ingredients
- 4banana — ripe
- 3egg — medium
- 150 galmond flour
- 75 gMedjool dates — pitted
- 2 tspbaking powder
- 1 tspcinnamon
- 60 gdark chocolate — minimum 70% cocoa
- 60 gwalnuts
- ¼ tspfine sea salt
Method

Preheat the oven to 175 °C top and bottom heat. Line a cake tin of approximately 25 cm with baking paper.

Peel three bananas and mash them together with the pitted dates until smooth.

Add the eggs one by one and whisk them into the banana mixture with a whisk.

In a separate bowl, mix the almond flour, baking powder, cinnamon, and sea salt. Briefly fold this into the wet mixture.

Roughly chop the dark chocolate and walnuts. Set aside a small amount of both for the top and fold the rest into the batter.

Spoon the batter into the cake tin and loosely smooth the top.

Peel the fourth banana and cut it lengthwise in half. Place both halves, cut-side up, on top of the batter. Distribute the reserved chocolate and walnuts around them.

Bake for approximately 45–50 minutes. Check from 45 minutes with a skewer; it should come out clean without wet batter.

Let it rest in the tin for 10 minutes. Then remove the banana bread from the tin and let it cool completely.
