
Oatmeal Pancakes with Blueberries

Start your day with fluffy oatmeal pancakes, served with fresh blueberries and creamy yoghurt. A simple breakfast you'll want to take your time enjoying.

Ingredients
- 150 grolled oats
- 200 mlsemi-skimmed milk or unsweetened plant-based drink
- 1 tspbaking powder
- 1egg — medium
- butter or neutral oil — for frying
- 100 gGreek yoghurt
- 100 gblueberries
- 2 tsphoney
Method

Place the rolled oats and milk in a blender or food processor. Blend until the oats are fine and a smooth batter forms.

Add the baking powder and egg and blend briefly until everything is well mixed.

Let the batter rest for 5 minutes. This allows the oats to absorb some liquid and the batter will become slightly firmer.

Heat a small amount of butter or oil in a frying pan over medium heat.

Scoop small portions of batter into the pan and form pancakes approximately 8–10 cm in diameter. Cook for about 2 minutes, until the top is almost set and the bottom is golden brown.

Carefully flip the pancakes and cook the other side for another 1–2 minutes until golden brown. Repeat until all the batter is used.

Divide the warm oatmeal pancakes among two plates. Spoon on the Greek yoghurt, scatter the blueberries over them, and finish with the honey.
